Oil festivities are always rich in treats. After all, Lent with its strict rules is coming soon. It is impossible to tell, that many of them followed all these rules. But pancakes on Shrovetide are loved by all. And according to tradition, many of them are prepared according to different recipes.
We continue a series of recipes, which come from which the yeast version will be delicious, lush and hearty pancakes with berries and raisins. Each family has its own branded options. I hope so, that mine will be a worthy addition to your cookbook. So, let's approach.
we prepare products
- Whole milk fat - 0.5 liters
- Homemade chicken eggs - 2-3 PC.
- Yeast - 50 city.
- Premium wheat flour - as needed
- Honey - 2 Art. l.
- Fresh-frozen berries - 100 city.
- Raisins - 50 city.
- Salt -? h. l.
- Refined vegetable oil - for frying.
I take fat milk, homemade, from the market. This will make the dough silky. If the milk is from the store, low-fat - add a little melted butter, to soften the consistency of the dough.
I take cherries. They can be fresh-frozen or canned in their own juice. They must first be discarded in a colander, to drain excess fluid.
Be sure to sift the flour through a fine sieve before adding it to the dough, to enrich it with oxygen. Then the pancakes will be even more airy.
Different amounts of flour may be needed. It depends on the fat content of the milk, the size of the eggs, moisture content of flour. The consistency of the dough is like thick sour cream.
The cooking process
- Heat the milk to a temperature 37-38 ?. Add honey to it, salt and yeast. Stir and let stand for a while, so that the yeast begins to "make friends" with all the ingredients in the bowl.
- In a bowl with milk, add eggs and beat until smooth.
- We begin to gradually add flour, stirring until smooth. At this stage, you can optionally add vanilla sugar or brown powder.
- Throw pre-steamed raisins and berries in a bowl with the dough.
- Stir, trying to do so, so that the berries are evenly distributed throughout the test.
- We leave in a warm place for stratification. The dough should increase in volume at least twice.
- Once the dough is ready, put on the fire pan with a thick bottom and pour vegetable oil (necessarily refined) and heat it.
- Soak a spoon in milk or water and spread the dough on the pan, forming pancakes. Choose the size yourself - you can even very small.
- Fry on each side until golden. But you need to fry over low heat, so that the pancakes are completely baked.

I serve with sour cream, cream, jam, honey. But mine are very fond of sour cream with roasted walnuts. And additions in the form of a cafe with cream or tea with honey, ginger and lemon - that's what for frosty February days.
