How to store smoked meat at home and how much

If you have a home smokehouse, then when cooking meat in it, prepare the product in significant quantities, which cannot be eaten at once. It is inexpedient to come otherwise. But in this case you have a problem, how to store smoked meat at home. Terms and conditions of this product depend on its type.

What meat can be stored

There are as many types of meat products, how many animals, but in everyday life we ​​often use:

  • pork;
  • beef;
  • mutton;
  • a rabbit;
  • nutria;
  • poultry: chicken, goose and duck.

Meat products also include offal: liver, heart, language and others. How to properly store smoked meat at home directly depends on its type and method of smoking. There are three options:

  • hot treatment;
  • cold treatment;
  • semi-hot finish.

Smoked ham or other product can be stored for the longest time after cold processing. For hot smoking products, shorter deadlines are decided, because they contain a large amount of fluid, which is a nutrient medium for bacteria.

Store smoked meat in the refrigerator

Products can be stored in the refrigerator at different temperatures, on which the terms depend. According to the existing technologies it is accepted to distinguish three regulations of the short maintenance without deep temperature processing:

  • at a temperature from +5 to +7 degrees C, you can keep the freshness of meat products up to 12 hours;
  • at temperatures from 0 to +5 degrees C - during the day;
  • in the mode from -3 to 0 degrees C - for 2 days.

This allows you to store smoked meat in the refrigerator, offal is stored for several hours less.

Freezing smoked meat in the freezer

If you need to keep the product longer, it must be frozen. In the freezer, smoked meat products can be stored longer. In this case, there are also three temperature regimes:

  • at temperatures from -10 to -8 storage is provided until 4 months;
  • at a temperature in the chamber from -18 degrees C to -10 degrees C can ensure the freshness of the smoked product up to 8 months;
  • if you store food in the freezer at a temperature of -24 degrees C to -18 degrees C, then they can be kept up 1 year.

Such long periods for storage of frozen smoked products, relevant rather for production, but these parameters will help you in everyday life, if you decide to smoke large volumes and you need to store them for a long time. But in this case the question, whether it is possible to freeze smoked pork ham, just as relevant, as well as the issue of proper thawing. The product should be kept at a temperature close to +12 degrees C until then, until it thaws completely.

Importantly! Freeze smoked ham or other types of smoked meat immediately at low temperatures. That is, the freezer must be turned on for at least 2 hours, for, that in it the proper mode of storage was formed. It is better to put the product in a vacuum package.

Storage options without refrigerator

Refrigerators have appeared relatively recently, but still smoked brisket, bones, bird wings and ??other delicacies. Our ancestors used the following methods:

  • Storage in fabrics. Natural fabric was impregnated with saline solution, wrapped them in the product and placed in a cool place, where there are no temperature differences, example, in the underground house.
  • In the attic. Smoked products are perfectly preserved in a ventilated attic, if you hang it in a rag bag.
  • In nettle leaves. If you are relaxing in nature, where there is not only a refrigerator, but also at home, cover the meat with nettle leaves. Keep the roll in the shade. So it will be able to maintain freshness for several days.
